i got a ek4 and some times the temperature gauge goes up like 2-3 bars more then normall.
ive put a new stat in so its not that and a temperature sensor, it dont seem to be over heating most the time the gauge goes up its still cold, the water pumps working and the head gaskets not on its way out, the fan kicks in as it should, dont no if anyone else has had this problem?

This. And from what you're saying I'm getting "it's remaining cold". If that's the case it wouldn't be a bad idea to put your thermostat in boiling water and see if it opens/closes. Sometimes if you buy aftermarket thermostats (O'Reillys) they remain open.

How old is the radiator?

ive already blead the cooling system, and the stat does open, the rad is like year old, it seems like the cooling system is runnin fine, the gauge is jus playin about

Try a different, known working, gauge cluster.

im thinkin it might be cluster beause its not doin it all the time, ive done temp sensor, and theres only one bleed screw on these?
